img_3806

Red Jujube is a popular healthy food in China, especially most women love it. I can not remember clearly when it began to have the aroma of Jujube cake on the street. It seems like all of a sudden there appeared Jujube Cake stores all over cities in China. When I studied at Beijing Language and Culture University, there was a famous Jujube Cake store at the Wu Dao Kou universe center. At night time, sometimes I hang out with friends at our universe center. The aroma of the Jujube Cake fill the air of the whole Wu Dao Kou area. However, I never had the patience to buy because the line up there was so long all the time.

Now I never have the chance to buy since I am not in Beijing, not in China any more. I miss the aroma so much. I think maybe what I miss is the time I spend at Beijing Language and Culture University and the memories I had around Wu Dao Kou area. So vivid! Well, we can not turn the clock back. But what I can do is experimenting copy the aroma, ,maybe even add some creation in it. That is how the recipe below was born.

  • Dry red jujube-150g
  • water
  • 3 eggs
  • pastry flour ( for those of you gluten free, can use rice flour instead) -300g
  • unsalted butter- 150g or half cup
  • brown sugar-100g
  • baking soda-1&1/2 teaspoon
  • salt- a hint
  • earl grey- 1 tea bag
